Scallop Crudo: Cold Luxury, Banquet Speed

Shell, ice, citrus, and chili — a bright opener that still plates ten at a time.

A scallop crudo has to taste of the sea, not of the fridge. Thin slices, a citrus suprême, a little chili, roe for salt-pop, and a shell nestled in crushed ice.

Chef Vasanth’s banquet version is designed for identical plates down the line — freshness with a system, so the first guest and the last guest get the same snap of cold and citrus.
