Why Masala Dosa Still Wins the Room

Fermented batter, crisp lace, and a soft potato heart — South India’s most generous classic.

Masala dosa looks simple until you chase the crackle. The batter needs fermentation; the pan needs heat; the potato masala needs mustard, curry leaf, and softness inside a golden shell.

Served with coconut chutney and sambar, it is the dish that makes international guests lean in. Light, aromatic, and endlessly repeatable when the station is trained well.
